Pumpkin / Butternut Squash

RECOMMENDATION

Pumpkin and butternut are very versatile vegetables which can be enjoyed roasted, steamed, pureed, used in soups and even grated and added to fritters or salads.

If not eating organic pumpkin, either wash or peel the skin if you wish to consume the skin. Roasted pumpkin with the skin left on can be a delicious way to enjoy this vegetable.

Both of the same family, these vegetables are high in vitamin C which has been shown to increase white blood cell production, reduce inflammation and boost our immune system.

They also contain large amounts of carotenoids which in many human studies has been found to lower the risk of throat, pancreas and breast cancer.
